One of my best i culled from the book "The secrets of hollywood Special Effects" though i had to modify it somewhat. It is for creating bullet hits to the head (and body, which again is a great alternative to squibs, but you doing get the squirting blood). The rig is basically a tube hooked up to a compressor (or any other source of air). The actual way of doing it calls for hits made of steric acid, but it's hard to aquire and the hits once made are only good for 30 minutes.
After some expirmenting i found the best method for me was to cut the ends of an aluminium arrow. I hooked it up to my compressor using a small bit of plastic tube attached to a trigger device (not sure what it's called but it's one of those guns used for blasting air to clean up). As for the load, i tried making gelatine bullets with some blood in them but they were too fragile. I found that small wads of toillet paper or cotton soaked in blood works best. The entire rig has to be aimed carefully and checked and rechecked, especially if you are firing at a forehead. It should be firmly clamped and your actor should not move at all. It only works for close ups and should be followed with some kind of exit wound blast. The psi should also be very low, between 4-7 psi. and actually if you are close enought you can just use it like a blow gun.
I only used an arrow because it was all i had lying arond beside 1/2" and 3/4" copper pipe. The arrow is a little small but works well for .22 calibur bullet hits, but for standar hits i think a 3/8" pipe would work best.
