I have a suggestion, but it all depends on what type of camera angle you are using for the cutting.
If you want to have a medium shot of the victim, then this won't apply.
If you want a close-up of the chainsaw cutting in and having the guts fly out, then this is an option. Here's my suggestion:
1. Ensure that you have an identical, or nearly identical shirt/jumper etc - to the one that your actor has been wearing/is wearing.
2. If you can, create a dummy out of whatever material you can find - something that can be cut through easily. Within this dummy, pack in all your guts/blood bags, ect.
3. Place the clothing around the dummy.
4. Set up the shot so that only the impact area of the chainsaw is in frame.
5. Make sure the set/location is clear and start the chainsaw.
6. Get set for filming
7. Cut into the dummy and hopefully the guts and everything else will be exposed and come out.
If this close-up is to be accompanied by a medium shot, showing the blood spray up in the air and the guts flying out - try and have someone under frame, without exposing them in the shot and have them spray the blood/throw the guts in the air.
Then you can show a final shot of the victim on the ground - have the original shirt worn by the victim and dress it up, to make it look like the blood/guts has gone everywhere.
You can also have a shot where you have the chainsaw just below frame, so you can't see that it isn't close to the actor and have someone under frame, or out of frame spraying/throwing the guts/blood.
I hope that helps, or at least gives you an idea of any alternatives. Like I said it depends on what type of angle/shot you want for the chainsaw impacting.
Good luck with your project
cheers

What im using in one of my movies is doe with lots of liver underneath which you can get from the butchers, and just do a close up of the doe, im not sure what it would look like because i havnt done it yet but, its worth a try.
